Easy Quinoa Salad

Today I wanted to share with you guys a quick and easy quinoa recipe that’s both delicious and healthy!
You can easily make as much or as little as you want, just adjust everything to your taste! I cook the quinoa as the package directs then let it cool in the fridge while I prep everything else. Some of the stuff I like to add to this salad are cherry tomatoes, cucumbers, green onions and avocados, but you can add whatever you like. Just cut them all up into small pieces and toss them in! For a dressing, I mix olive oil and lemon juice (or lime) with some salt to taste. I mix that into the salad and mix thoroughly. At the end, I put in a generous amount of cilantro (which I find makes a huge, important difference). Just let it chill, then dig in!
